History

Chu-hi began as shochu highball shorthand after World War II. Modern versions showcase Japanese citrus such as aromatic yuzu. This is a clearly labeled house field riff rather than a historical classic: Hibiscus adds tart berry depth and a dramatic crimson color.

Ingredients

  • 12 oz shochu
  • 21 oz yuzu juice
  • 31/2 oz simple syrup
  • 4Soda water
  • 51/4 oz hibiscus syrup

Method

  1. 01Build over ice and top with cold soda.
  2. 02Add the hibiscus syrup before mixing and garnish with a citrus wheel.
