Julio Bermejo created this agave-forward Margarita at Tommy’s Mexican Restaurant in San Francisco in the late 1980s, omitting orange liqueur. This is a clearly labeled house field riff rather than a historical classic: Aromatic bitters pull warm spice and orange peel into the foreground.

Ingredients
- 12 oz reposado tequila
- 21 oz lime juice
- 31/2 oz agave nectar
- 42 dashes aromatic bitters
Method
- 01Shake with ice and strain over fresh ice.
- 02Add the bitters with the other ingredients and finish with expressed orange oil.
