History

Ngiam Tong Boon created the pink long drink at Raffles Hotel around 1915, reportedly disguising it as a socially acceptable fruit punch for women. This is a clearly labeled house field riff rather than a historical classic: Smoked salt sharpens the base spirit while suggesting a distant getaway fire.

Gin Β· yields one cocktail

Ingredients

  • 11 1/2 oz gin
  • 21/2 oz cherry liqueur
  • 31/4 oz herbal liqueur
  • 42 oz pineapple juice
  • 51/2 oz lime juice
  • 6Bitters
  • 71 pinch smoked sea salt

Method

  1. 01Shake with ice and strain into an ice-filled highball.
  2. 02Mix in a very small pinch of smoked salt and garnish as directed.
