Its exact inventor is disputed between Paris and London, but the Sidecar emerged after World War I and perfected the brandy sour template. This is a clearly labeled house field riff rather than a historical classic: Grapefruit introduces bracing bitterness and a clean, ruby-toned snap.

Ingredients
- 12 oz cognac
- 23/4 oz orange liqueur
- 33/4 oz lemon juice
- 4Sugar rim, optional
- 51/2 oz pink grapefruit juice
Method
- 01Shake hard with ice and fine-strain into a chilled coupe.
- 02Add grapefruit with the citrus or mixer and prepare as directed.
