History
The old Bajan rhyme—one of sour, two of sweet, three of strong, four of weak—preserves one of the Caribbean’s earliest punch formulas. This is a clearly labeled house field riff rather than a historical classic: Black tea contributes dry tannin and a quietly smoky backbone.

Ingredients
- 12 oz aged rum
- 21 oz lime juice
- 33/4 oz simple syrup
- 42 oz water
- 5Nutmeg
- 61/2 oz chilled black tea
Method
- 01Shake with ice, pour over fresh ice, and grate nutmeg on top.
- 02Mix the tea with the other ingredients and serve especially cold.
