Rum Punch: Tropic Thunder

History

The old Bajan rhyme—one of sour, two of sweet, three of strong, four of weak—preserves one of the Caribbean’s earliest punch formulas. This is a clearly labeled house field riff rather than a historical classic: Pineapple gives the drink tropical acidity, soft foam, and a bright fruit note.

Rum · yields one cocktail

Ingredients

  • 12 oz aged rum
  • 21 oz lime juice
  • 33/4 oz simple syrup
  • 42 oz water
  • 5Nutmeg
  • 61/2 oz pineapple juice

Method

  1. 01Shake with ice, pour over fresh ice, and grate nutmeg on top.
  2. 02Add pineapple before mixing and use a firm shake whenever the recipe permits.
