Pisco Sour: Crimson Signal

History

American bartender Victor Morris is generally credited with creating the drink in 1920s Lima; Mario Bruiget later added egg white and bitters. This is a clearly labeled house field riff rather than a historical classic: Hibiscus adds tart berry depth and a dramatic crimson color.

Ingredients

  • 12 oz pisco
  • 21 oz lime juice
  • 33/4 oz simple syrup
  • 41 egg white
  • 53 dashes bitters
  • 61/4 oz hibiscus syrup

Method

  1. 01Dry-shake, shake again with ice, strain, and dot the foam with bitters.
  2. 02Add the hibiscus syrup before mixing and garnish with a citrus wheel.
