History
American bartender Victor Morris is generally credited with creating the drink in 1920s Lima; Mario Bruiget later added egg white and bitters. This is a clearly labeled house field riff rather than a historical classic: Coffee contributes roasted depth and a clandestine after-dark character.

Ingredients
- 12 oz pisco
- 21 oz lime juice
- 33/4 oz simple syrup
- 41 egg white
- 53 dashes bitters
- 61/4 oz coffee liqueur
Method
- 01Dry-shake, shake again with ice, strain, and dot the foam with bitters.
- 02Add the coffee liqueur before mixing and omit a little sweetener if desired.
