History

Named for Rangoon’s Pegu Club, a colonial officers’ club founded in the 1880s, the sharp gin sour first appeared in cocktail books in the 1920s. This is a clearly labeled house field riff rather than a historical classic: Black tea contributes dry tannin and a quietly smoky backbone.

Ingredients

  • 12 oz gin
  • 23/4 oz orange curaçao
  • 33/4 oz lime juice
  • 42 dashes aromatic bitters
  • 51/2 oz chilled black tea

Method

  1. 01Shake with ice and strain into a chilled coupe.
  2. 02Mix the tea with the other ingredients and serve especially cold.
