History
Named for Rangoon’s Pegu Club, a colonial officers’ club founded in the 1880s, the sharp gin sour first appeared in cocktail books in the 1920s. This is a clearly labeled house field riff rather than a historical classic: Black tea contributes dry tannin and a quietly smoky backbone.

Ingredients
- 12 oz gin
- 23/4 oz orange curaçao
- 33/4 oz lime juice
- 42 dashes aromatic bitters
- 51/2 oz chilled black tea
Method
- 01Shake with ice and strain into a chilled coupe.
- 02Mix the tea with the other ingredients and serve especially cold.
