The Paloma’s origins are hazy, but its rise is tied to Mexico’s mid-century grapefruit sodas. It is now arguably Mexico’s favorite tequila highball. This is a clearly labeled house field riff rather than a historical classic: Coffee contributes roasted depth and a clandestine after-dark character.
Tequila · yields one cocktail
Ingredients
- 12 oz blanco tequila
- 21/2 oz lime juice
- 3Grapefruit soda
- 4Pinch of salt
- 51/4 oz coffee liqueur
Method
- 01Build over ice in a salt-rimmed highball and top with grapefruit soda.
- 02Add the coffee liqueur before mixing and omit a little sweetener if desired.
