By the 1880s, drinkers asking for a cocktail made the old-fashioned way meant spirit, sugar, water, and bitters—the original cocktail formula. This is a clearly labeled house field riff rather than a historical classic: Black tea contributes dry tannin and a quietly smoky backbone.

Ingredients
- 12 oz bourbon or rye
- 21 tsp demerara syrup
- 32 dashes aromatic bitters
- 4Orange peel
- 51/2 oz chilled black tea
Method
- 01Stir with ice, strain over a large cube, and garnish with orange.
- 02Mix the tea with the other ingredients and serve especially cold.
