History

Its lineage reaches the 16th-century medicinal El Draque. In Havana, rum, lime, mint, and soda evolved into the modern Mojito. This is a clearly labeled house field riff rather than a historical classic: Black tea contributes dry tannin and a quietly smoky backbone.

Ingredients

  • 12 oz white rum
  • 21 oz lime juice
  • 33/4 oz simple syrup
  • 4Mint
  • 5Soda water
  • 61/2 oz chilled black tea

Method

  1. 01Gently press mint with syrup and lime, add ice and rum, then top with soda.
  2. 02Mix the tea with the other ingredients and serve especially cold.
