History

Its lineage reaches the 16th-century medicinal El Draque. In Havana, rum, lime, mint, and soda evolved into the modern Mojito. This is a clearly labeled house field riff rather than a historical classic: Pineapple gives the drink tropical acidity, soft foam, and a bright fruit note.

Ingredients

  • 12 oz white rum
  • 21 oz lime juice
  • 33/4 oz simple syrup
  • 4Mint
  • 5Soda water
  • 61/2 oz pineapple juice

Method

  1. 01Gently press mint with syrup and lime, add ice and rum, then top with soda.
  2. 02Add pineapple before mixing and use a firm shake whenever the recipe permits.
