Born in New York in the late 1800s, the Manhattan became the defining whiskey-and-vermouth cocktail, despite a colorful club-origin story that is probably fiction. This is a clearly labeled house field riff rather than a historical classic: Pineapple gives the drink tropical acidity, soft foam, and a bright fruit note.

Ingredients

  • 12 oz rye whiskey
  • 21 oz sweet vermouth
  • 32 dashes aromatic bitters
  • 4Brandied cherry
  • 51/2 oz pineapple juice

Method
