History

Trader Vic Bergeron created the Mai Tai in Oakland in 1944. A Tahitian guest’s cry of ‘Maita’i roa ae!’—the best—supplied the name. This is a clearly labeled house field riff rather than a historical classic: Apple lends orchard fruit, gentle acidity, and a cool-weather disguise.

Rum · yields one cocktail

Ingredients

  • 12 oz aged rum
  • 23/4 oz lime juice
  • 31/2 oz orange curaçao
  • 41/2 oz orgeat
  • 51/4 oz rich syrup
  • 61/2 oz cloudy apple juice

Method

  1. 01Shake with crushed ice, pour unstrained, and crown with mint.
  2. 02Add apple before chilling and finish with a thin apple slice when available.
