Trader Vic Bergeron created the Mai Tai in Oakland in 1944. A Tahitian guest’s cry of ‘Maita’i roa ae!’—the best—supplied the name. This is a clearly labeled house field riff rather than a historical classic: Coffee contributes roasted depth and a clandestine after-dark character.

Ingredients
- 12 oz aged rum
- 23/4 oz lime juice
- 31/2 oz orange curaçao
- 41/2 oz orgeat
- 51/4 oz rich syrup
- 61/4 oz coffee liqueur
Method
- 01Shake with crushed ice, pour unstrained, and crown with mint.
- 02Add the coffee liqueur before mixing and omit a little sweetener if desired.
