An Australian pub staple since at least the mid-20th century, this low-alcohol refresher became so ubiquitous it is often called the country’s national drink. This is a clearly labeled house field riff rather than a historical classic: Fresh basil supplies a peppery herbal lift without masking the original recipe.

Ingredients
- 14 oz lemon-lime soda
- 21/2 oz lime cordial
- 35 dashes aromatic bitters
- 4Lime wedge
- 54 fresh basil leaves
Method
- 01Coat the glass with bitters, add ice and cordial, then top with soda.
- 02Gently clap the basil, mix it with the drink, and reserve one leaf for garnish.
