History

An Australian pub staple since at least the mid-20th century, this low-alcohol refresher became so ubiquitous it is often called the country’s national drink. This is a clearly labeled house field riff rather than a historical classic: Fresh basil supplies a peppery herbal lift without masking the original recipe.

Ingredients

  • 14 oz lemon-lime soda
  • 21/2 oz lime cordial
  • 35 dashes aromatic bitters
  • 4Lime wedge
  • 54 fresh basil leaves

Method

  1. 01Coat the glass with bitters, add ice and cordial, then top with soda.
  2. 02Gently clap the basil, mix it with the drink, and reserve one leaf for garnish.
