History

The drink honors Félix Kir, a Burgundian mayor who popularized local cassis with white wine. Champagne turns the regional aperitif into the Royale. This is a clearly labeled house field riff rather than a historical classic: Coffee contributes roasted depth and a clandestine after-dark character.

  • 11/2 oz crème de cassis
  • 24 oz Champagne
  • 31/4 oz coffee liqueur

Method
