Irish Coffee: Smoke Screen

History

Chef Joe Sheridan served the warming combination to delayed passengers at Foynes airbase in 1943. Travel writer Stanton Delaplane carried it to San Francisco. This is a clearly labeled house field riff rather than a historical classic: Smoked salt sharpens the base spirit while suggesting a distant getaway fire.

Whiskey ยท yields one cocktail

Ingredients

  • 11 1/2 oz Irish whiskey
  • 24 oz hot coffee
  • 32 tsp brown sugar
  • 4Lightly whipped cream
  • 51 pinch smoked sea salt

Method

  1. 01Dissolve sugar in hot coffee and whiskey; float cold cream over a spoon.
  2. 02Mix in a very small pinch of smoked salt and garnish as directed.
