History
Chef Joe Sheridan served the warming combination to delayed passengers at Foynes airbase in 1943. Travel writer Stanton Delaplane carried it to San Francisco. This is a clearly labeled house field riff rather than a historical classic: Grapefruit introduces bracing bitterness and a clean, ruby-toned snap.

Ingredients
- 11 1/2 oz Irish whiskey
- 24 oz hot coffee
- 32 tsp brown sugar
- 4Lightly whipped cream
- 51/2 oz pink grapefruit juice
Method
- 01Dissolve sugar in hot coffee and whiskey; float cold cream over a spoon.
- 02Add grapefruit with the citrus or mixer and prepare as directed.
