Named for Havana’s grand Hotel Nacional, this 1930s drink captures the glamour of pre-revolutionary Cuban cocktail culture. This is a clearly labeled house field riff rather than a historical classic: Smoked salt sharpens the base spirit while suggesting a distant getaway fire.

Ingredients
- 11 1/2 oz aged rum
- 21/2 oz apricot liqueur
- 31 oz pineapple juice
- 41/2 oz lime juice
- 51 pinch smoked sea salt
Method
- 01Shake with ice and strain into a chilled coupe.
- 02Mix in a very small pinch of smoked salt and garnish as directed.
