Goa’s potent cashew feni dates to the 16th-century Portuguese introduction of cashew trees. The sour format softens and showcases its famously aromatic character. Ingredients

  • 12 oz cashew feni
  • 21 oz lime juice
  • 33/4 oz sugar syrup
  • 4Egg white
  • 52 dashes aromatic bitters

Method

  1. 01Dry-shake, shake with ice, and fine-strain into a coupe.
  2. 02Add the bitters with the other ingredients and finish with expressed orange oil.
