Named for the powerful French 75mm field gun, this sparkling drink appeared in its modern form in Harry MacElhone’s 1920s Paris bar books. This is a clearly labeled house field riff rather than a historical classic: Smoked salt sharpens the base spirit while suggesting a distant getaway fire.
Gin · yields one cocktail
Ingredients
- 11 oz gin
- 21/2 oz lemon juice
- 31/2 oz simple syrup
- 43 oz Champagne
- 51 pinch smoked sea salt
Method
- 01Shake the first three ingredients, strain into a flute, and top with Champagne.
- 02Mix in a very small pinch of smoked salt and garnish as directed.
