History

Named for the powerful French 75mm field gun, this sparkling drink appeared in its modern form in Harry MacElhone’s 1920s Paris bar books. This is a clearly labeled house field riff rather than a historical classic: Smoked salt sharpens the base spirit while suggesting a distant getaway fire.

Gin · yields one cocktail

Ingredients

  • 11 oz gin
  • 21/2 oz lemon juice
  • 31/2 oz simple syrup
  • 43 oz Champagne
  • 51 pinch smoked sea salt

Method

  1. 01Shake the first three ingredients, strain into a flute, and top with Champagne.
  2. 02Mix in a very small pinch of smoked salt and garnish as directed.
