Espresso Martini: Tropic Thunder

London bartender Dick Bradsell devised it in the 1980s after a model asked for something to wake her up and then mess her up. This is a clearly labeled house field riff rather than a historical classic: Pineapple gives the drink tropical acidity, soft foam, and a bright fruit note.

Vodka · yields one cocktail

Ingredients

  • 11 1/2 oz vodka
  • 21 oz fresh espresso
  • 33/4 oz coffee liqueur
  • 41/4 oz simple syrup
  • 51/2 oz pineapple juice

Method

  1. 01Shake very hard with ice and fine-strain into a chilled coupe.
  2. 02Add pineapple before mixing and use a firm shake whenever the recipe permits.
