History
Swahili for ‘medicine,’ the Dawa became a Nairobi institution at the Carnivore restaurant in the 1980s and spread throughout East Africa. This is a clearly labeled house field riff rather than a historical classic: Smoked salt sharpens the base spirit while suggesting a distant getaway fire.
Vodka · yields one cocktail
Ingredients
- 12 oz vodka
- 21 lime, quartered
- 31 tbsp honey
- 4Crushed ice
- 51 pinch smoked sea salt
Method
- 01Muddle lime with vodka, add crushed ice, and stir with a honey-coated stick.
- 02Mix in a very small pinch of smoked salt and garnish as directed.
