Grogue, Cabo Verde’s sugarcane spirit, has been distilled on the islands for centuries. This punch follows the Atlantic tradition of balancing cane spirit with citrus and sugar. This is a clearly labeled house field riff rather than a historical classic: Pineapple gives the drink tropical acidity, soft foam, and a bright fruit note.

Ingredients

  • 12 oz grogue
  • 21 oz lime juice
  • 33/4 oz cane syrup
  • 4Nutmeg
  • 51/2 oz pineapple juice

Method

  1. 01Shake with ice, strain over fresh ice, and finish with nutmeg.
  2. 02Add pineapple before mixing and use a firm shake whenever the recipe permits.
