History

Giuseppe Cipriani created the Bellini at Harry’s Bar in Venice in 1948, naming its pink hue after a color used by Renaissance painter Giovanni Bellini. This is a clearly labeled house field riff rather than a historical classic: Black tea contributes dry tannin and a quietly smoky backbone.

Ingredients

  • 12 oz white peach purée
  • 24 oz chilled prosecco
  • 31/2 oz chilled black tea

Method

  1. 01Pour purée into a flute, top slowly with prosecco, and stir once.
  2. 02Mix the tea with the other ingredients and serve especially cold.
