Bellini: Tropic Thunder

History

Giuseppe Cipriani created the Bellini at Harry’s Bar in Venice in 1948, naming its pink hue after a color used by Renaissance painter Giovanni Bellini. This is a clearly labeled house field riff rather than a historical classic: Pineapple gives the drink tropical acidity, soft foam, and a bright fruit note.

Ingredients

  • 12 oz white peach purée
  • 24 oz chilled prosecco
  • 31/2 oz pineapple juice

Method

  1. 01Pour purée into a flute, top slowly with prosecco, and stir once.
  2. 02Add pineapple before mixing and use a firm shake whenever the recipe permits.
