Arak & Water: Night Orchard

History

Anise-scented arak has accompanied Levantine mezze for generations. Adding water releases its essential oils in the traditional transformation known as the louche. This is a clearly labeled house field riff rather than a historical classic: Apple lends orchard fruit, gentle acidity, and a cool-weather disguise.

Ingredients

  • 12 oz arak
  • 24 oz cold water
  • 3Ice
  • 41/2 oz cloudy apple juice

Method

  1. 01Add water to arak first, then ice, turning the spirit its signature cloudy white.
  2. 02Add apple before chilling and finish with a thin apple slice when available.
